Ingredients

  • 1 pound Ground beef (lean)
  • 1 tablespoon Olive oil
  • 1 medium Yellow onion, diced
  • 3 cloves Garlic, minced
  • 2 medium Carrots, peeled and diced
  • 2 stalks Celery stalks, diced
  • 1 small head Green cabbage, chopped
  • 14.5 ounces Diced tomatoes (canned, with juices)
  • 6 cups Beef broth (low-sodium)
  • 2 tablespoons Tomato paste
  • 1 teaspoon Dried thyme
  • 1 teaspoon Dried oregano
  • 1 teaspoon Paprika
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 whole Bay leaf
  • 2 tablespoons Fresh parsley, chopped (optional, for garnish)

Directions

Step 1

Heat the olive oil in a large stockpot or Dutch oven over medium heat.

Step 2

Add the ground beef and cook until browned, breaking it apart with a wooden spoon, about 5 minutes. Drain any excess grease and set the beef aside.

Step 3

In the same pot, add the diced onion, garlic, carrots, and celery. Sauté for 5-7 minutes, stirring occasionally, until the vegetables soften.

Step 4

Add the chopped cabbage to the pot and stir well to combine.

Step 5

Return the cooked beef to the pot, then add the canned diced tomatoes (with their juices), beef broth, and tomato paste. Stir well.

Step 6

Season the soup with dried thyme, oregano, paprika, salt, and black pepper. Add the bay leaf to the pot.

Step 7

Bring the mixture to a boil over high heat, then reduce the heat to low and let it simmer for 25-30 minutes, stirring occasionally.

Step 8

Taste and adjust the seasoning as needed. Remove the bay leaf before serving.

Step 9

Ladle the soup into bowls and garnish with fresh parsley (if desired). Serve hot and enjoy!
