  • 2 cups dried navy beans
  • 6 slices bacon
  • 1 medium yellow onion
  • 2 cloves garlic
  • 1 cup ketchup
  • 0.25 cup molasses
  • 0.25 cup brown sugar
  • 2 tablespoons Dijon mustard
  • 2 tablespoons apple cider vinegar
  • 1 teaspoon smoked paprika
  • 1 teaspoon salt
  • 0.5 teaspoon ground black pepper
  • 4 cups water

Directions

Step 1

Rinse the dried navy beans in a colander under cold running water, removing any debris. Place beans in a large bowl and cover them with water. Soak overnight or for at least 8 hours.

After soaking, drain the beans and set them aside.

Step 3

In a large pot, add the bacon and cook over medium heat until crisp. Remove the bacon, crumble it, and set it aside. Leave about 2 tablespoons of bacon grease in the pot.

Dice the onion and mince the garlic. Add both to the pot with the bacon grease, and cook over medium heat for 5 minutes, until the onion is translucent and fragrant.

Preheat your oven to 300°F (150°C).

Add the drained beans to the pot along with 4 cups of water. Bring to a boil, then reduce the heat to a simmer. Cover and cook for 45 minutes, or until the beans are tender but not mushy.
