Ingredients

  • 2.5 cups All-purpose flour
  • 1 teaspoon Baking powder
  • 0.25 teaspoons Salt
  • 0.75 cups Unsalted butter (softened)
  • 1 cups Granulated sugar
  • 0.5 cups Light brown sugar (packed)
  • 1 Large egg
  • 1.5 teaspoons Cotton candy flavoring extract
  • 1 teaspoon Vanilla extract
  • 2 drops Pink gel food coloring (optional)
  • 2 drops Blue gel food coloring (optional)
  • 0.25 cup Rainbow sprinkles (optional, for decoration)

Directions

Step 1

Preheat the oven to 350°F (175°C) and line two baking sheets with parchment paper or silicone baking mats.

Step 2

In a medium-sized bowl, whisk together the all-purpose flour, baking powder, and salt. Set aside.

Step 3

In a large mixing bowl, use an electric mixer to cream the softened butter, granulated sugar, and light brown sugar until light and fluffy (about 2-3 minutes).

Step 4

Add the egg, cotton candy flavoring extract, and vanilla extract to the butter mixture and beat until well combined.

Step 5

Gradually add the dry ingredients to the wet ingredients, mixing just until a dough forms. Be careful not to overmix.

Step 6

If you want a colorful cotton candy look, divide the dough into two equal portions. Tint one half of the dough with the pink gel food coloring and the other half with the blue gel food coloring. Mix until the colors are evenly distributed.

Step 7

Take small pieces of each colored dough and gently press them together to form a marble effect. Roll the combined dough into 1 1/2-inch balls.

Step 8

Place the cookie dough balls onto the prepared baking sheets, spacing them about 2 inches apart. If desired, sprinkle a few rainbow sprinkles on top of each ball for decoration.

Step 9

Bake in the preheated oven for 8-10 minutes, or until the edges are just starting to set and the centers still look slightly underbaked. Do not overbake, as the cookies will continue to set as they cool.

Step 10

Let the cookies cool on the baking sheets for 5 minutes, then transfer them to a wire rack to cool completely.

Step 11

Serve and enjoy your whimsical cotton candy cookies!
