Ingredients

  • 300 grams Gruyère cheese
  • 200 grams Emmental cheese
  • 250 milliliters Dry white wine
  • 1 clove Garlic
  • 1 tablespoon Cornstarch
  • 2 tablespoons Kirsch (cherry brandy)
  • 0.25 teaspoons Nutmeg
  • 0.25 teaspoons Black pepper
  • 1 loaf French bread (or similar crusty bread)
  • 300 grams Raw vegetables (e.g., carrots, broccoli, cauliflower, etc.)

Directions

Step 1

Grate the Gruyère and Emmental cheese into a mixing bowl and set aside.

Step 2

Peel the garlic clove, cut it in half, and rub the inside of the fondue pot (or a heavy-bottomed saucepan) thoroughly with the cut sides of the garlic. Discard the garlic afterward.

Step 3

Pour the dry white wine into the pot and heat it gently over medium heat until it begins to simmer. Do not let it boil.

Step 4

Add the grated cheeses to the wine gradually, one handful at a time, stirring constantly with a wooden spoon until the cheese completely melts and turns smooth.

Step 5

In a small bowl, mix the cornstarch and Kirsch until it forms a smooth slurry. Stir this into the cheese mixture in the pot.

Step 6

Continue to cook the mixture over low heat, stirring constantly, until thickened and glossy. Be careful not to overheat as the cheese may break or scorch.

Step 7

Season the fondue with nutmeg and black pepper to taste. Stir well to combine.

Step 8

Transfer the fondue pot to a heat source on the table to keep it warm, such as a fondue stand with a tea light or small burner.

Step 9

Cut the French bread loaf into bite-sized cubes, ensuring each piece has some crust to make it easier to dip.

Step 10

Prepare raw vegetables by washing, peeling (if necessary), and cutting them into bite-sized pieces. Arrange these with the bread cubes around the fondue pot for dipping.

Step 11

Serve immediately and enjoy by dipping the bread and vegetables into the creamy fondue using long fondue forks or skewers.
