Ingredients

  • 2 tablespoons olive oil
  • 1 pound ground beef
  • 1 pound ground lamb
  • 1 medium yellow onion, finely chopped
  • 2 medium carrots, diced
  • 1 celery stalk, diced
  • 3 garlic cloves, minced
  • 2 tablespoons tomato paste
  • 2 tablespoons Worcestershire sauce
  • 1.5 cups beef broth
  • 1 cup frozen peas
  • 1 cup frozen corn
  • 2 teaspoons fresh thyme, chopped
  • 1.5 teaspoons salt
  • 1 teaspoon black pepper
  • 4 medium russet potatoes, peeled and diced
  • 4 tablespoons butter
  • 0.5 cup milk
  • 0.5 cup sharp cheddar cheese, shredded (optional)

Directions

Step 1

Preheat your oven to 400°F (200°C).

Step 2

Peel, dice, and boil the potatoes in salted water until tender, about 15 minutes.

Step 3

While the potatoes cook, heat olive oil in a large skillet over medium-high heat.

Step 4

Add ground beef and lamb to the skillet. Cook until browned, breaking up the meat with a spoon, about 5-7 minutes. Drain excess fat if necessary.

Step 5

Add the chopped onion, carrots, celery, and garlic to the skillet. Cook until the vegetables soften, about 5 minutes.

Step 6

Stir in tomato paste and Worcestershire sauce. Mix thoroughly to evenly coat the meat and vegetables.

Step 7

Pour in the beef broth and stir. Simmer for about 10 minutes, allowing the mixture to thicken slightly.

Step 8

Stir in the frozen peas, frozen corn, thyme, salt, and black pepper. Remove the skillet from heat and set aside.

Step 9

Once the potatoes are tender, drain them and return them to the pot. Add butter, milk, and optional cheddar cheese to the pot. Mash until smooth and creamy. Season the mashed potatoes with salt to taste.

Step 10

Transfer the meat and vegetable mixture into a large baking dish, spreading it out evenly.

Step 11

Spoon the mashed potatoes over the meat layer, spreading them out evenly to cover the filling completely. Use a fork to create a textured pattern on top, if desired.

Step 12

Bake in the preheated oven for 20-25 minutes, or until the top is golden and bubbling.

Step 13

Allow to cool slightly before serving. Enjoy your delicious Cottage Shepherd’s Pie!
