  • 12 oz medium shell pasta
  • 2 tbsp olive oil
  • 3 garlic cloves, minced
  • 6 cups baby spinach, fresh
  • 1 cup cottage cheese
  • 1 cup parmesan cheese, grated
  • 0.25 cup milk
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 0.25 tsp crushed red pepper flakes (optional)

Directions

Step 1

Bring a large pot of salted water to a boil. Cook the shell pasta according to the package instructions until al dente. Reserve 1/2 cup of pasta cooking water, then drain and set aside.

While the pasta cooks, heat olive oil in a large skillet over medium heat.

Add the minced garlic to the skillet and sauté for 1-2 minutes until fragrant, being careful not to burn it.

Add the baby spinach to the skillet in batches, stirring frequently, until wilted, about 3-5 minutes. Remove from heat once all the spinach has cooked down.
