Ingredients

  • 6 medium Russet potatoes
  • 4 tablespoons Unsalted butter
  • 1 medium Yellow onion
  • 1 cup Sour cream
  • 1.5 cups Shredded sharp cheddar cheese
  • 1 teaspoon Garlic powder
  • 1 teaspoon Salt
  • 0.5 teaspoon Ground black pepper
  • 2 tablespoons Chopped fresh parsley (for garnish)
  • 1 as needed Cooking spray

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Peel the potatoes and cut them into 1-inch cubes. Place them in a large pot and cover with cold water. Add a pinch of salt to the water to season the potatoes.

Step 3

Bring the pot to a boil over medium-high heat. Reduce the heat to a simmer and cook the potatoes for about 10-12 minutes, or until they are fork-tender. Drain the potatoes well and set aside.

While the potatoes are cooling slightly, finely dice the yellow onion. In a small skillet or saucepan, melt 2 tablespoons of butter over medium heat. Add the diced onion and sauté for 3-4 minutes, or until softened and translucent. Remove from heat.
