Preheat your oven to 200°C (400°F).
Heat the olive oil in a large skillet over medium heat. Add the onion, carrot, and celery. Sauté for 5 minutes until the vegetables are softened.

Bake in the preheated oven for 25-30 minutes, or until the potato topping is golden and crispy.
