  • 2 tbsp olive oil
  • 1 medium onion (finely chopped)
  • 2 medium carrots (diced)
  • 2 celery stalks (diced)
  • 3 garlic cloves (minced)
  • 500 g lean ground beef
  • 2 tbsp tomato paste
  • 400 g diced tomatoes (canned)
  • 1 cup beef stock
  • 2 tbsp Worcestershire sauce
  • 1 tsp fresh thyme leaves
  • 1 cup frozen peas
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 800 g kumara (sweet potatoes)
  • 3 tbsp unsalted butter
  • 0.25 cup milk
  • 0.5 cup grated cheddar cheese

Directions

Step 1

Preheat your oven to 200°C (390°F).

Step 2

Peel the kumara and cut it into large chunks. Place the kumara in a pot of salted water, bring to a boil, and cook for 15 minutes or until tender.

While the kumara is cooking, heat the olive oil in a large skillet over medium heat. Add the onion, carrots, and celery, and cook for 5-7 minutes until they start to soften.

Add the minced garlic and cook for an additional minute until fragrant.

Add the ground beef to the skillet and cook until browned, breaking it apart with a wooden spoon as it cooks.

Bake in the preheated oven for 20 minutes or until the cheese is melted and golden.
