Preheat your oven to 200°C (390°F).
Peel the kumara and cut it into large chunks. Place the kumara in a pot of salted water, bring to a boil, and cook for 15 minutes or until tender.
While the kumara is cooking, heat the olive oil in a large skillet over medium heat. Add the onion, carrots, and celery, and cook for 5-7 minutes until they start to soften.
Add the minced garlic and cook for an additional minute until fragrant.
Add the ground beef to the skillet and cook until browned, breaking it apart with a wooden spoon as it cooks.
Stir in the tomato paste and cook for 1 minute. Then, add the diced tomatoes, beef stock, Worcestershire sauce, and thyme. Stir to combine and bring to a simmer.
Reduce the heat to low, cover, and let the beef mixture simmer for 15 minutes. Stir occasionally. Add the frozen peas during the last 5 minutes of simmering.
Season the mixture with salt and black pepper, and then spoon it into an ovenproof dish, spreading it evenly.
Drain the cooked kumara and return it to the pot. Add the butter and milk, then mash until smooth. Season with a pinch of salt.
Spread the kumara mash over the beef mixture in the dish, smoothing it out with the back of a spoon. Sprinkle the grated cheese evenly over the top.
Bake in the preheated oven for 20 minutes or until the cheese is melted and golden.
Allow the cottage pie to rest for 5 minutes before serving. Enjoy!
