Ingredients

  • 2 tablespoons olive oil
  • 1 large, finely chopped onion
  • 2 medium, diced carrots
  • 2 diced celery stalks
  • 2 minced garlic cloves
  • 500 grams ground beef
  • 2 tablespoons tomato paste
  • 250 milliliters beef stock
  • 1 tablespoon Worcestershire sauce
  • 100 grams frozen peas
  • 1 teaspoon (or to taste) salt
  • 0.5 teaspoon (or to taste) black pepper
  • 900 grams, peeled and quartered potatoes
  • 125 milliliters milk
  • 50 grams unsalted butter
  • 75 grams, grated cheddar cheese

Directions

Step 1

Preheat your oven to 200°C (180°C fan) or 400°F.

Step 2

Heat the olive oil in a large skillet or saucepan over medium heat. Add the onion, carrots, and celery, and cook for 5-7 minutes until softened.

Step 3

Add the minced garlic and cook for 1 additional minute until fragrant.

Step 4

Add the ground beef to the pan, breaking it up with a wooden spoon as it cooks. Cook until browned, about 8-10 minutes.

Step 5

Stir in the tomato paste, beef stock, and Worcestershire sauce. Bring to a simmer and let it cook for 15 minutes, stirring occasionally, until the mixture thickens slightly.

Step 6

Stir in the frozen peas, and season with salt and pepper to taste. Remove from heat and set aside.

Step 7

While the filling is cooking, boil the potatoes in salted water for 15-20 minutes, or until tender.

Step 8

Drain the potatoes and mash them with the butter and milk until smooth and creamy. Season with salt and pepper as needed.

Step 9

Spoon the beef mixture into an ovenproof dish and spread it out evenly. Top with the mashed potatoes, spreading them evenly over the meat to cover it completely. Use a fork to create a textured pattern on the surface.

Step 10

Sprinkle the grated cheddar cheese evenly over the top of the mashed potatoes.

Step 11

Bake in the preheated oven for 25-30 minutes, or until the topping is golden and bubbling.

Step 12

Remove from the oven and let the cottage pie cool for 5 minutes before serving. Enjoy!
