  • 400 grams pitted cherries (fresh or frozen)
  • 100 grams granulated sugar (for filling)
  • 1 tablespoon cornstarch
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract
  • 1 egg (for egg wash)
  • 1 teaspoon milk (for egg wash)
  • 1 tablespoon powdered sugar (optional, for dusting)

Directions

Step 1

In a large mixing bowl, combine the all-purpose flour and granulated sugar. Add the cold, diced butter and use your fingers or a pastry blender to rub the butter into the flour until the mixture resembles coarse crumbs.

Add the cold water one tablespoon at a time, mixing gently until the dough just comes together. Do not overmix. Form the dough into a disk, wrap in plastic wrap, and refrigerate for at least 30 minutes.

While the dough chills, prepare the cherry filling. In a medium saucepan over medium heat, combine the pitted cherries, granulated sugar, cornstarch, lemon juice, and vanilla extract. Stir until the cherries release their juices and the mixture thickens, about 5-7 minutes. Remove from heat and allow the filling to cool completely.
