Ingredients

  • 4 pieces Boneless chicken breasts
  • 2 cups Fresh spinach
  • 1 cup Cottage cheese
  • 2 cloves Garlic cloves
  • 2 tablespoons Olive oil
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 1 teaspoon Paprika
  • 1 teaspoon Dried oregano
  • 1 cup Shredded mozzarella cheese
  • 1 tablespoon Lemon juice

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Using a small sharp knife, make a pocket in each chicken breast by slicing horizontally along one side, being careful not to cut all the way through.

Step 3

Heat 1 tablespoon of olive oil in a skillet over medium heat. Add the minced garlic and fresh spinach. Sauté for 2-3 minutes until the spinach wilts. Remove from heat and set aside to cool slightly.

In a mixing bowl, combine the sautéed spinach, cottage cheese, salt, black pepper, and oregano. Mix well.

Stuff each chicken breast with the spinach and cottage cheese mixture, then secure the opening with toothpicks or cooking twine.
