  • 300 grams All-purpose flour
  • 200 grams Unsalted butter
  • 100 grams Cream cheese
  • 1 teaspoon Salt
  • 1 whole Egg yolk
  • 250 grams Cottage cheese (full fat, pressed to remove excess moisture)
  • 60 grams Powdered sugar
  • 1 teaspoon Vanilla extract
  • 50 grams Raisins (optional)
  • 1 whole Egg wash (1 egg beaten with 1 tablespoon of water)
  • 10 grams Powdered sugar (for dusting)

Directions

Step 1

In a large mixing bowl, combine the all-purpose flour and salt. Add the cold unsalted butter and cream cheese, then use your fingertips or a pastry cutter to blend until the mixture resembles coarse breadcrumbs.

Step 2

Add the egg yolk and mix until the dough just comes together. Wrap the dough in plastic wrap and refrigerate for at least 1 hour.

Prepare the filling by combining the cottage cheese, powdered sugar, and vanilla extract in a bowl. If using, stir in the raisins. Set aside.
