Ingredients

  • 1 cup cottage cheese
  • 0.5 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1 tablespoon sugar
  • 0.25 teaspoon salt
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 0.25 cup milk
  • 2 tablespoons butter
  • 1 tablespoon oil or butter

Directions

Step 1

In a medium bowl, combine the cottage cheese, eggs, and vanilla extract. Mix well until thoroughly combined.

Step 2

In another bowl, mix the all-purpose flour, baking powder, sugar, and salt.

Step 3

Pour the dry ingredients into the wet ingredients and mix gently until just combined. Be careful not to overmix.

Step 4

Add the milk to the mixture and stir until you have a smooth batter.

Step 5

Heat a large skillet or griddle over medium heat and add 1 tablespoon of oil or butter.

Step 6

Once the skillet is hot, pour about 1/4 cup of batter for each pancake onto the skillet. Cook in batches if necessary, leaving enough space between each pancake.

Step 7

Cook until bubbles form on the surface of the pancakes and the edges look set, about 2-3 minutes.

Step 8

Flip the pancakes and continue cooking until the other side is golden brown, approximately 1-2 minutes more.

Step 9

Transfer the cooked pancakes to a plate and cover loosely with foil to keep warm while you cook the remaining pancakes.

Step 10

Serve the pancakes warm with your choice of toppings, such as fresh berries, maple syrup, or a sprinkle of powdered sugar.
