Ingredients

  • 1 cup Cottage cheese
  • 0.25 cup Water
  • 1 large Egg
  • 2 tablespoons Unsalted butter
  • 3 cups All-purpose flour
  • 1 teaspoon Dried lavender
  • 1.5 teaspoons Fresh rosemary, chopped
  • 1.5 teaspoons Fresh thyme, chopped
  • 1 teaspoon Salt
  • 2 tablespoons Sugar
  • 2.25 teaspoons Active dry yeast

Directions

Step 1

Add the cottage cheese and water to a small saucepan. Warm over low heat, stirring occasionally, until the mixture is lukewarm (about 100-110°F). Be careful not to overheat.

Step 2

Break the egg into a small bowl and lightly whisk it. Add the whisked egg to the bread machine pan, along with the warmed cottage cheese and water mixture.

Step 3

Melt the unsalted butter and pour it into the bread machine pan.

Step 4

Add the all-purpose flour, dried lavender, chopped rosemary, and chopped thyme to the bread machine pan.

Step 5

Sprinkle the salt and sugar over the top of the flour mixture, ensuring these ingredients do not come into direct contact with the liquid layer below.

Step 6

Using a spoon, make a shallow indentation in the center of the flour (but not as deep as the liquid). Add the active dry yeast to this indentation.

Step 7

Place the bread pan into your automatic bread machine and close the lid.

Step 8

Select the basic or white bread setting on the bread machine. If available, choose the medium crust option.

Step 9

Start the bread machine and allow the dough to knead, rise, and bake as per the machine’s programmed cycle.

Step 10

Once the baking cycle is complete, carefully remove the bread pan from the machine. Turn the bread out onto a wire rack to cool completely before slicing.

Step 11

Serve as a side or for sandwiches, or enjoy on its own with butter or olive oil.
