  • 500 grams Spinach leaves (palak)
  • 250 grams Paneer (cottage cheese)

  • 1 medium, finely chopped Tomato
  • 4 small, minced Garlic cloves
  • 1 inch, grated Ginger
  • 2 whole or adjusted to taste, chopped Green chilies
  • 1 teaspoon Cumin seeds
  • 0.5 teaspoon Turmeric powder
  • 0.5 teaspoon Red chili powder
  • 0.5 teaspoon Garam masala
  • 1 teaspoon or to taste Salt
  • 2 tablespoons Oil or ghee
  • 2 tablespoons Heavy cream or fresh cream
  • 1 cup, or as needed Water

Directions

Step 1

Wash the spinach leaves thoroughly in running water to remove any dirt or grit. Blanch the spinach in boiling water for 2 minutes, then transfer it to a bowl of ice-cold water to preserve its vibrant green color.

Step 2

Drain the spinach and blend it into a smooth puree using a blender. Set aside.

Step 3

Cut the paneer into bite-sized cubes. Optionally, lightly pan-fry the paneer cubes in 1 teaspoon of oil or ghee until golden on the edges, then set aside.

Heat 2 tablespoons of oil or ghee in a deep skillet or pan over medium heat. Add cumin seeds and let them splutter.
