  • 4 medium crookneck squash
  • 1 medium yellow onion
  • 1 teaspoon salt

  • 1.5 cups cottage cheese
  • 1 cup shredded sharp cheddar cheese

  • 1 cup breadcrumbs
  • 2 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 0.5 teaspoon garlic powder
  • 2 tablespoons fresh parsley

Directions

Step 1

Preheat your oven to 375°F (190°C) and grease a 9x9-inch baking dish.

Slice the crookneck squash into thin rounds and finely dice the yellow onion.
