Ingredients

  • 3.5 cups All-purpose flour
  • 0.25 cups Granulated sugar
  • 1 teaspoon Salt
  • 2.25 teaspoons Instant yeast
  • 0.75 cups Cottage cheese
  • 0.5 cups Milk
  • 0.25 cups Unsalted butter (melted)
  • 1 large Egg
  • 0.75 cups Brown sugar
  • 1.5 tablespoons Ground cinnamon
  • 0.25 cups Unsalted butter (softened)
  • 1.5 cups Powdered sugar
  • 1 teaspoon Vanilla extract
  • 2 tablespoons Milk (for icing)

Directions

Step 1

In a large mixing bowl, combine the flour, granulated sugar, salt, and instant yeast. Mix well.

Step 2

In a microwave-safe bowl, heat the milk until lukewarm (around 110°F/45°C). Blend the cottage cheese in a food processor until smooth, then combine with the warm milk.

Step 3

Add the melted butter and egg to the milk mixture and whisk until well incorporated.

Step 4

Gradually pour the wet ingredients into the dry ingredients, stirring with a wooden spoon until a shaggy dough forms. Knead on a floured surface for 8–10 minutes until the dough is smooth and elastic.

Step 5

Place the dough in a greased bowl, cover with a kitchen towel, and let it rise in a warm place for about 1 hour, or until doubled in size.

Step 6

While the dough rises, prepare the filling by combining the brown sugar, cinnamon, and softened butter in a small bowl. Mix until it forms a paste.

Step 7

After the dough has risen, punch it down and roll it out into a 12x18-inch rectangle on a floured surface.

Step 8

Spread the cinnamon-sugar filling evenly over the dough, leaving a small border around the edges.

Step 9

Roll the dough tightly from the longer side to form a log. Cut the log into 12 equal pieces and place them in a greased 9x13-inch baking dish.

Step 10

Cover the dish with plastic wrap or a towel and let the rolls rise for another 30 minutes until doubled in size.

Step 11

Preheat the oven to 350°F (175°C). Bake the rolls for 20–25 minutes, or until golden brown on top.

Step 12

To make the icing, whisk together the powdered sugar, vanilla extract, and milk until smooth. Adjust the consistency with more milk or powdered sugar, if needed.

Step 13

Once the cinnamon rolls are slightly cooled, drizzle or spread the icing on top. Serve warm and enjoy!
