Ingredients

  • 450 grams cottage cheese
  • 150 grams mixed nuts (walnuts, almonds, cashews, or pecans)
  • 120 grams breadcrumbs
  • 3 large eggs
  • 1 large onion, finely chopped
  • 2 cloves garlic, minced
  • 50 grams grated Parmesan cheese
  • 2 tablespoons olive oil
  • 1 teaspoon dried thyme
  • 2 teaspoons dried parsley
  • 1 teaspoon salt
  • 0.5 teaspoons black pepper
  • 1 tablespoon lemon juice

Directions

Step 1

Preheat your oven to 180°C (350°F). Grease and line a loaf tin with parchment paper for easy removal later.

In a large skillet, heat the olive oil over medium heat. Sauté the chopped onion and minced garlic until softened and fragrant, about 5 minutes. Remove from heat and let cool slightly.
