Ingredients

  • 2 cups Corn masa harina
  • 1.5 cups Warm water
  • 1 pound Ground beef
  • 1 medium Onion
  • 2 Garlic cloves
  • 1 small Red bell pepper
  • 1 medium Tomato
  • 0.5 cup Cilantro
  • 2 tablespoons Vegetable oil
  • 1.5 teaspoons Salt
  • 0.5 teaspoon Black pepper

Directions

Step 1

In a large mixing bowl, combine the corn masa harina with warm water and 1 teaspoon of salt. Knead the mixture until a smooth, pliable dough forms. Cover with a damp cloth and set aside.

Step 2

In a skillet, heat the vegetable oil over medium heat. Add the diced onion and minced garlic, and sauté until softened and fragrant, about 3 minutes.

Step 3

Add the ground beef to the skillet and cook until browned, breaking it apart with a wooden spoon, about 5-7 minutes.

Step 4

Stir in the diced red bell pepper, chopped tomato, chopped cilantro, and 0.5 teaspoon of salt and black pepper. Cook for another 5 minutes, until the vegetables are softened and the flavors combine. Remove from heat and let the filling cool slightly.

Step 5

Divide the masa dough into 8 equal portions and roll each into a ball. Flatten each ball into a circular disc about 6 inches in diameter using a tortilla press or by pressing between two sheets of parchment paper.

Step 6

Place 2-3 tablespoons of the beef filling onto the center of one disc. Cover with another disc of masa, pressing the edges to seal tightly and form a stuffed tortilla.

Step 7

Heat a dry skillet or griddle over medium-high heat. Cook each stuffed tortilla for 3-4 minutes on each side, until golden brown and cooked through.

Step 8

Serve warm with optional sides such as sour cream, salsa, or a light salad.
