Ingredients

  • 2 cups long grain white rice
  • 4 cups chicken broth
  • 1 pound cajun sausage (andouille or smoked sausage)
  • 0.5 pound ground beef
  • 1 medium yellow onion, finely diced
  • 1 medium green bell pepper, finely diced
  • 2 stalks celery stalks, finely diced
  • 4 cloves garlic, minced
  • 1.5 tablespoons cajun seasoning
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried thyme
  • 0.5 teaspoon ground cayenne pepper
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons olive oil
  • 2 stalks scallions, chopped (for garnish)
  • 0 to taste hot sauce (optional)

Directions

Step 1

Rinse the rice in cold water until the water runs clear. Set aside.

Step 2

Heat 1 tablespoon of olive oil in a large skillet or Dutch oven over medium heat. Add the cajun sausage, sliced into rounds, and cook until browned on both sides, about 5 minutes. Remove and set aside.

Step 3

In the same skillet, add the ground beef and cook until fully browned, breaking it up into small pieces, about 5 minutes. Drain any excess fat and set the beef aside with the sausage.

Step 4

Add the remaining tablespoon of olive oil to the skillet. Stir in the diced onions, bell pepper, and celery. Cook until the vegetables are softened, about 7 minutes.

Step 5

Stir in the minced garlic and cook for 1 minute until fragrant.

Step 6

Add the uncooked rice to the skillet and stir to coat it in the vegetable mixture. Let the rice toast slightly for 2 minutes.

Step 7

Sprinkle in the cajun seasoning, smoked paprika, thyme, cayenne, salt, and black pepper. Mix well to evenly coat the rice and vegetables.

Step 8

Pour in the chicken broth and stir. Bring the mixture to a boil, then reduce the heat to low, cover the skillet with a tight-fitting lid, and let it simmer for 20-25 minutes.

Step 9

Halfway through cooking, stir the sausage and ground beef back into the skillet. Ensure the lid is replaced tightly for the remainder of the cooking time.

Step 10

Once the rice is fully cooked and the liquid is absorbed, fluff the rice with a fork. Taste and adjust seasoning if necessary.

Step 11

Garnish with chopped scallions and drizzle with hot sauce if desired. Serve immediately and enjoy the spicy, savory flavors of Cory's Dirty Rice!
