Ingredients

  • 4 pieces chicken breasts, boneless and skinless
  • 2 tablespoons olive oil
  • 1 large onion, finely chopped
  • 2 tablespoons curry powder
  • 1 tablespoon tomato paste
  • 75 milliliters red wine
  • 3 tablespoons apricot jam
  • 150 milliliters water
  • 1 leaf bay leaf
  • 1 tablespoon lemon juice
  • 200 grams mayonnaise
  • 100 grams Greek yogurt
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper, freshly ground
  • 100 grams apricots, dried and chopped
  • 50 grams slivered almonds, toasted

Directions

Step 1

Preheat your oven to 200°C (400°F).

Step 2

Place the chicken breasts on a baking tray, drizzle with 1 tablespoon of olive oil, and season with salt and pepper.

Step 3

Roast the chicken in the preheated oven for about 25-30 minutes until fully cooked and golden brown.

Step 4

While the chicken is cooking, heat the remaining tablespoon of olive oil in a pan over medium heat and sauté the chopped onion until soft and translucent, about 5 minutes.

Add the curry powder to the pan and cook for another minute to release the flavors.

Step 6

Stir in the tomato paste, cook for a minute, then pour in the red wine. Let it reduce by half.

Add the apricot jam, water, and bay leaf. Simmer for 10 minutes until it thickens slightly, then remove the bay leaf and allow the mixture to cool.

Once cooled, blend the mixture with lemon juice until smooth.

In a large bowl, combine the cooled curry mixture with the mayonnaise, Greek yogurt, salt, and pepper.

Once the chicken is cooked and cooled, chop it into bite-size pieces and fold it into the curry sauce.

Add the chopped dried apricots and half of the toasted almonds to the mixture. Stir well to combine.

Serve the coronation chicken garnished with the remaining toasted almonds. It can be enjoyed as a filling for sandwiches, wraps, or served over a salad.
