Ingredients

  • 1.5 cups all-purpose flour
  • 0.5 cup yellow cornmeal
  • 3 tablespoons granulated sugar
  • 1 tablespoon baking powder
  • 0.5 teaspoons salt
  • 6 tablespoons unsalted butter, cold and cubed
  • 0.75 cup buttermilk
  • 1 teaspoon vanilla extract
  • 1 piece egg, beaten (for egg wash)
  • 2 teaspoons coarse sugar (optional, for sprinkling)

Directions

Step 1

Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

Step 2

In a large bowl, combine the all-purpose flour, cornmeal, sugar, baking powder, and salt. Mix well to evenly distribute the dry ingredients.

Step 3

Add the cold, cubed butter to the dry ingredients. Use a pastry cutter or your fingertips to cut the butter into the flour mixture until it resembles coarse crumbs.

Step 4

In a separate small bowl, whisk together the buttermilk and vanilla extract.

Step 5

Pour the buttermilk mixture into the dry ingredients. Use a spatula or your hands to gently mix until the dough just comes together. Be careful not to overmix; the dough should be slightly sticky.

Step 6

Turn the dough out onto a lightly floured surface. Gently pat or roll the dough into a circle about 3/4 inch thick.

Step 7

Using a knife or bench scraper, cut the dough into 8 even wedges (like a pie) and transfer them to the prepared baking sheet, spacing them about 2 inches apart.

Step 8

Brush the tops of the scones with the beaten egg to give them a golden finish. If desired, sprinkle some coarse sugar over the tops for added sweetness and texture.

Step 9

Bake the scones in the preheated oven for 16-18 minutes, or until the tops are golden and the edges are firm.

Step 10

Remove the scones from the oven and let them cool slightly on a wire rack. Serve warm or at room temperature with your favorite toppings, such as butter, honey, or jam.
