Ingredients

  • 4 pieces Tilapia fillets
  • 0.75 cups Cornmeal
  • 1 teaspoons Paprika
  • 1 teaspoons Garlic powder
  • 1 teaspoons Salt
  • 0.5 teaspoons Black pepper
  • 2 large Eggs
  • 3 tablespoons Vegetable oil
  • 1 15-ounce can Canned black beans
  • 0.5 teaspoons Ground cumin
  • 1 tablespoons Fresh lime juice
  • 1 cup Fresh salsa (store-bought or homemade)
  • 2 tablespoons Chopped fresh cilantro
  • 4 pieces Lime wedges

Directions

Step 1

Preheat a large skillet over medium heat.

Step 2

In a shallow dish, mix the cornmeal, paprika, garlic powder, salt, and black pepper.

Step 3

In another shallow dish, beat the eggs until smooth.

Step 4

Pat the tilapia fillets dry with paper towels. Dip each fillet into the beaten eggs, letting any excess drip off, then coat it in the cornmeal mixture, pressing lightly to adhere.

Step 5

Heat the vegetable oil in the skillet. Fry the coated tilapia fillets for about 3-4 minutes per side, or until golden brown and cooked through. Remove from the skillet and place on a paper towel-lined plate to drain any excess oil.

Step 6

While the fish cooks, heat the black beans in a small saucepan over medium heat. Stir in the ground cumin and fresh lime juice, and cook until warmed through, about 5 minutes.

Step 7

To plate, divide the black beans among four plates. Top each serving with a tilapia fillet and spoon salsa over the fish.

Step 8

Garnish with chopped cilantro and serve with lime wedges on the side.
