Ingredients

  • 1.5 cups All-purpose flour
  • 0.5 cups Cornmeal
  • 0.25 cups Granulated sugar

  • 0.5 teaspoons Salt
  • 0.5 cups Unsalted butter, cold and diced
  • 1 cup Fresh blueberries
  • 0.5 cups Heavy cream
  • 1 large Egg
  • 1 teaspoon Vanilla extract
  • 1 tablespoon Optional: Demerara sugar for topping

Directions

Step 1

Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

In a large mixing bowl, whisk together the all-purpose flour, cornmeal, granulated sugar, baking powder, and salt.

Add the cold, diced butter to the bowl. Using a pastry cutter or your fingers, work the butter into the dry ingredients until the mixture resembles coarse crumbs.
