Ingredients

  • 500 grams All-purpose flour
  • 10 grams Salt
  • 100 grams Unsalted butter
  • 7 grams Fast-action yeast
  • 10 grams Sugar
  • 300 milliliters Warm water
  • 200 grams Cooked diced potatoes
  • 150 grams Cooked diced beef (optional)
  • 100 grams Cooked diced carrots
  • 100 grams Cooked diced onions
  • 100 grams Cheddar cheese, grated
  • 1 teaspoon Black pepper
  • 1 Egg (for egg wash)

Directions

Step 1

In a large mixing bowl, combine the flour, salt, and sugar.

Step 2

Rub the butter into the flour mixture until it resembles breadcrumbs.

Step 3

Stir the yeast into the warm water and let it sit for 5 minutes until frothy.

Step 4

Make a well in the center of the flour mixture and pour in the yeast mixture. Mix until a dough forms.

Step 5

Knead the dough on a floured surface for 8-10 minutes until smooth and elastic.

Step 6

Place the dough into an oiled bowl, cover with a clean kitchen towel, and let it rise for 1 hour, or until doubled in size.

Step 7

Meanwhile, prepare the filling. In a large bowl, mix the cooked potatoes, beef (if using), carrots, onions, cheddar cheese, and black pepper. Adjust seasoning if needed.

Step 8

Preheat the oven to 200°C (400°F) and line a baking tray with parchment paper.

Step 9

Once the dough has risen, punch it down and roll it out into a large rectangle, about 1 cm thick.

Step 10

Place the filling in the center of the rectangle, leaving about 5 cm of dough along the edges.

Step 11

Fold the edges of the dough over the filling, pinching the seams to seal, and shape it into a loaf.

Step 12

Place the loaf seam-side down on the prepared baking tray.

Step 13

Beat the egg and brush it over the loaf to give it a golden crust during baking.

Step 14

Bake in the preheated oven for 30-35 minutes, or until the loaf is golden brown and sounds hollow when tapped on the bottom.

Step 15

Let the Cornish loaf cool for at least 15 minutes before slicing and serving.
