Ingredients

  • 4 pieces Cornish game hens
  • 2 teaspoons Salt
  • 1 teaspoon Black pepper
  • 2 tablespoons Olive oil
  • 4 tablespoons Butter
  • 1 cup Orange juice
  • 2 tablespoons Orange zest
  • 4 cups Bread cubes
  • 1 large Yellow onion, finely chopped
  • 2 stalks Celery, finely chopped
  • 1 teaspoon Dried thyme
  • 1 teaspoon Dried sage
  • 1 cup Chicken broth
  • 2 tablespoons Fresh parsley, chopped

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Rinse the Cornish game hens under cold water and pat them dry with paper towels. Season the inside and outside of each hen with 1 1/2 teaspoons of salt and 1 teaspoon of black pepper.

Step 3

In a large skillet, heat 2 tablespoons of olive oil and 4 tablespoons of butter over medium heat until melted.

Add the chopped onion and celery to the skillet and sauté for 5-7 minutes, or until softened and fragrant.

Stir in the thyme, sage, orange zest, and bread cubes. Mix well to coat evenly.
