Preheat your oven to 375°F (190°C).
Rinse the Cornish game hens under cold water and pat them dry with paper towels. Season the inside and outside of each hen with 1 1/2 teaspoons of salt and 1 teaspoon of black pepper.
In a large skillet, heat 2 tablespoons of olive oil and 4 tablespoons of butter over medium heat until melted.
Add the chopped onion and celery to the skillet and sauté for 5-7 minutes, or until softened and fragrant.
Stir in the thyme, sage, orange zest, and bread cubes. Mix well to coat evenly.
Pour the orange juice and chicken broth into the skillet. Stir gently to moisten the bread mixture evenly. Remove the stuffing from heat and fold in the chopped parsley.
