Ingredients

  • 2 whole Cornish game hens
  • 1 teaspoon Salt
  • 1 teaspoon Freshly ground black pepper
  • 2 tablespoons Olive oil
  • 2 tablespoons Butter
  • 2 whole Shallots, finely chopped
  • 1 cup Dry vermouth
  • 1 cup Chicken stock
  • 2 cups Red or green seedless grapes, halved
  • 4 sprigs Fresh thyme sprigs
  • 2 tablespoons Lemon juice

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Rinse the Cornish game hens under cold water and pat them dry with paper towels.

Step 3

Season the hens generously inside and out with salt and pepper.

Step 4

Heat the olive oil in a large ovenproof skillet or roasting pan over medium-high heat.

Step 5

Add the hens to the pan and sear them until golden brown on all sides, about 4-5 minutes per side. Remove the hens and set them aside.

Step 6

Reduce the heat to medium and melt the butter in the same pan.

Step 7

Add the chopped shallots to the pan and sauté until they are softened and translucent, about 2-3 minutes.

Deglaze the pan by pouring in the vermouth, scraping up any brown bits from the bottom of the pan.
