Preheat your oven to 375°F (190°C).
Rinse the Cornish game hens under cold water and pat them dry with paper towels.
Season the hens generously inside and out with salt and pepper.
Heat the olive oil in a large ovenproof skillet or roasting pan over medium-high heat.
Add the hens to the pan and sear them until golden brown on all sides, about 4-5 minutes per side. Remove the hens and set them aside.
Reduce the heat to medium and melt the butter in the same pan.
