Ingredients

  • 115 grams Unsalted butter
  • 150 grams Granulated sugar
  • 50 grams Brown sugar, packed
  • 1 piece Large egg
  • 1.5 teaspoons Vanilla extract
  • 120 grams All-purpose flour
  • 90 grams Cornmeal
  • 1 teaspoon Baking powder
  • 0.5 teaspoon Salt
  • 1 tablespoon Milk

Directions

Step 1

Preheat your oven to 175°C (350°F) and line two baking sheets with parchment paper.

Step 2

In a large mixing bowl, cream together the unsalted butter, granulated sugar, and brown sugar until light and fluffy, about 2-3 minutes.

Step 3

Add the egg and vanilla extract to the butter-sugar mixture, and beat until fully incorporated.

Step 4

In a separate bowl, whisk together the all-purpose flour, cornmeal, baking powder, and salt.

Gradually add the dry ingredients to the wet mixture, mixing on low speed until a dough forms. If the dough seems too dry, add the tablespoon of milk and mix again.
