  • 3 liters water
  • 2 tablespoons brown sugar
  • 2 tablespoons apple cider vinegar
  • 10 whole peppercorns
  • 2 whole bay leaves
  • 1 teaspoon mustard seeds
  • 1 large onion
  • 3 whole garlic cloves
  • 2 medium carrots
  • 2 medium celery stalks
  • 4 medium potatoes (optional, for serving)
  • 1 small cabbage (optional, for serving)

Directions

Step 1

Rinse the corned beef silverside under cold water to remove any excess brine. Pat dry with paper towels.

Step 2

Place the corned beef in a large pot or Dutch oven.

Step 3

Add the water to the pot, ensuring that the meat is fully submerged. If necessary, add more water.

Step 4

Add the brown sugar, apple cider vinegar, peppercorns, bay leaves, and mustard seeds to the pot.

Step 5

Peel the onion and garlic cloves. Cut the onion into quarters and lightly crush the garlic cloves. Add both to the pot.

Peel and chop the carrots and celery into large chunks, then add them to the pot as well.

Bring the pot to a gentle boil over medium heat, then reduce the heat to low and cover with a lid.
