Ingredients

  • 8 oz egg noodles
  • 12 oz corned beef (canned or cooked, shredded)
  • 1 medium russet potatoes (peeled and diced)
  • 1 medium onion (finely chopped)
  • 2 cloves garlic (minced)
  • 2 tbsp soy sauce
  • 1 tbsp oyster sauce
  • 1 tbsp sesame oil
  • 2 tbsp vegetable oil
  • 2 stalks scallions (sliced thin)
  • 0.5 tsp red chili flakes (optional, for heat)
  • 0 salt (to taste)
  • 0 black pepper (to taste)

Directions

Step 1

Cook the egg noodles according to the package instructions. Drain, rinse with cold water, and toss with 1 teaspoon of sesame oil to prevent sticking. Set aside.

Step 2

Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium heat. Add the diced potatoes and cook for 5-7 minutes, stirring occasionally, until golden brown and tender. Remove from the skillet and set aside.

Step 3

In the same skillet, add another tablespoon of vegetable oil. Sauté the chopped onion and minced garlic for 2-3 minutes until fragrant and slightly softened.
