Ingredients

  • 1.5 cups cooked corned beef
  • 3 medium russet potatoes
  • 2 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 1 medium yellow onion
  • 2 cloves garlic
  • 2 tablespoons fresh parsley
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 4 eggs (optional, fried or poached for serving)

Directions

Step 1

Peel and dice the potatoes into small 1/2-inch cubes. Place them in a pot of cold, salted water and bring to a boil. Cook for 5-7 minutes, or until just fork-tender. Drain and set aside.

Step 2

Dice the cooked corned beef into small, bite-sized pieces. Finely chop the onion and mince the garlic.

Step 3

Heat a large skillet over medium heat. Add the butter and olive oil, allowing it to melt and heat up until shimmering.

Step 4

Add the chopped onion to the skillet and sauté for 3-5 minutes, or until softened and golden.

Step 5

Stir in the minced garlic and cook for another 30 seconds until fragrant.

Step 6

Increase the heat to medium-high. Add the cooked potatoes to the skillet in a single layer. Let them cook undisturbed for 3-4 minutes to develop a golden crust before flipping or stirring.

Step 7

Stir in the diced corned beef. Spread the mixture evenly in the skillet and press it down lightly with the back of your spatula. Cook for another 5 minutes, flipping occasionally, until the hash is crispy and golden brown.

Step 8

Season with salt and black pepper to taste. Sprinkle the chopped parsley over the dish for a fresh, herby finish.

Step 9

If serving with eggs, fry or poach them to your preference and place on top of the hash.

Step 10

Serve immediately and enjoy your homemade Corned Beef Hash!
