Ingredients

  • 3 pounds corned beef brisket with spice packet
  • 4 cups water
  • 1.5 pounds small red potatoes
  • 4 large carrots, peeled and cut into chunks
  • 1 medium yellow onion, cut into wedges
  • 1 small green cabbage, cut into wedges
  • 2 cloves garlic cloves, minced
  • 2 tablespoons dijon mustard (optional, for serving)

Directions

Step 1

Rinse the corned beef brisket under cold water to remove excess brine and pat it dry with paper towels.

Step 2

Place the brisket in the bottom of a large slow cooker (6-7 quarts). Sprinkle the spice packet (included with the brisket) evenly over the top.

Step 3

Pour 4 cups of water into the slow cooker to ensure the brisket is mostly submerged.

Add the potatoes, carrots, onion, and minced garlic around the brisket.
