Ingredients

  • 1.5 kg corned silverside
  • 4 cups water
  • 0.5 cups apple cider vinegar
  • 2 tablespoons brown sugar
  • 1 tablespoon whole black peppercorns
  • 2 pieces bay leaves
  • 4 pieces cloves
  • 3 pieces garlic cloves, peeled and crushed
  • 3 pieces carrots, peeled and cut into chunks
  • 2 pieces celery stalks, cut into chunks
  • 1 piece onion, peeled and quartered
  • 4 pieces potatoes, peeled and halved (optional)

Directions

Step 1

Rinse the corned silverside under cold water to remove any excess brine and pat it dry with paper towels.

Step 2

Place the corned silverside into the crock pot, fat side up.

Step 3

Add water, apple cider vinegar, and brown sugar to the crock pot. Stir gently to dissolve the sugar.

Step 4

Sprinkle the whole peppercorns, bay leaves, and cloves over the liquid.

Step 5

Add the crushed garlic, carrots, celery, onion, and optional potatoes around the silverside in the crock pot.

Step 6

Cover the crock pot with its lid and set it to low heat.

Step 7

Cook on low for 8 hours, or until the silverside is fork-tender. Ensure the slow cooker remains covered throughout cooking to retain moisture and flavor.

Step 8

Once done, carefully remove the silverside from the crock pot and let it rest for 10 minutes before slicing against the grain.

Step 9

Serve the meat with the cooked vegetables and a ladle of the warm cooking liquid, if desired.
