Ingredients

  • 3 pounds corned beef brisket
  • 8 cups water
  • 1 whole large onion
  • 2 whole bay leaves
  • 10 whole black peppercorns
  • 4 whole large carrots, peeled and cut into chunks
  • 8 whole small red potatoes, halved
  • 1 whole head of cabbage, cut into wedges

Directions

Step 1

Rinse the corned beef under cold water to remove excess salt and set it aside.

Step 2

Place the corned beef in a large pot or Dutch oven and add water to cover the meat by about 1 inch.

Cut the onion into quarters and add it to the pot along with the bay leaves and peppercorns.

Bring the mixture to a boil over high heat, then reduce the heat to low, cover, and simmer for about 2.5 to 3 hours. The corned beef should be fork-tender.
