Ingredients

  • 4 cups (sliced) yellow squash
  • 1 medium (diced) yellow onion
  • 4 tablespoons unsalted butter
  • 1 cup cornbread mix
  • 1 cup sour cream
  • 1 cup shredded cheddar cheese
  • 2 large eggs
  • 0.5 cup milk
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.5 cup bread crumbs
  • 1 tablespoon olive oil

Directions

Step 1

Preheat your oven to 375°F (190°C) and lightly grease a 9x13-inch baking dish.

Step 2

In a large skillet, melt 2 tablespoons of butter over medium heat. Add the sliced squash and diced onion, cooking for 5-7 minutes until softened. Season with 1/2 teaspoon of salt and 1/4 teaspoon of black pepper. Remove from heat and let cool slightly.

Step 3

In a large mixing bowl, combine the cornbread mix, sour cream, shredded cheddar cheese, eggs, milk, remaining 1/2 teaspoon of salt, and 1/4 teaspoon of black pepper. Stir until well mixed.

Step 4

Gently fold the cooked squash and onions into the batter, ensuring everything is evenly coated.

Step 5

Pour the mixture into the prepared baking dish, spreading it out evenly.

Step 6

In a small bowl, combine the bread crumbs with the olive oil. Sprinkle the breadcrumb mixture evenly over the top of the casserole.

Step 7

Cut the remaining 2 tablespoons of butter into small pieces and scatter them across the breadcrumb topping.

Step 8

Bake in the preheated oven for 35-40 minutes, or until the top is golden brown and the casserole is set in the center.

Step 9

Remove from the oven and let cool for 5-10 minutes before serving. Enjoy!
