  • 8 cups (crumbled) Cornbread
  • 8 slices (cooked and crumbled) Bacon
  • 1 cup (shredded) Cheddar cheese
  • 1 cup (halved) Cherry tomatoes
  • 1 (diced) Red bell pepper
  • 0.5 cup (sliced) Green onions
  • 1 cup Corn (canned or frozen, thawed)
  • 1 (diced) Cucumber
  • 1 cup Sour cream
  • 1 cup Mayonnaise
  • 1 packet (1 ounce) Ranch dressing mix
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper

Directions

Step 1

Preheat the oven to 400°F (200°C). Prepare your favorite cornbread recipe or use a mix to bake an 8-inch square pan of cornbread. Allow it to cool completely, then crumble into bite-sized pieces.

Step 2

Cook the bacon in a skillet over medium heat until crispy, then drain on paper towels and crumble. Set aside.

Step 3

In a small bowl, combine sour cream, mayonnaise, ranch dressing mix, salt, and black pepper. Whisk until smooth and well mixed. Set aside.

Step 4

In a large clear glass bowl (to showcase the layers), begin assembling the salad. Start with half of the crumbled cornbread as the base layer.
