Ingredients

  • 1 box (approximately 8.5 oz) Cornbread mix
  • 1 can (15 oz) Creamed corn
  • 1 can (15 oz), drained Whole kernel corn
  • 1 cup Sour cream
  • 0.5 cup, melted Butter
  • 2 large Eggs
  • 2 tablespoons Sugar
  • 0.5 teaspoon Salt
  • 1.5 cups (optional) Shredded cheddar cheese

Directions

Step 1

Preheat your oven to 350°F (175°C). Grease a 9x13-inch baking dish with butter or cooking spray.

Step 2

In a large mixing bowl, combine the cornbread mix, creamed corn, drained whole kernel corn, sour cream, melted butter, sugar, and salt. Mix until just combined.

Step 3

Crack the eggs into the bowl and beat them slightly before mixing into the batter. Stir until everything is well incorporated.

Step 4

If using cheddar cheese, fold in 1 cup of the shredded cheese, reserving 1/2 cup for topping.

Step 5

Pour the batter into the prepared baking dish and spread it evenly with a spatula.

Step 6

Sprinkle the remaining 1/2 cup of cheddar cheese over the top (if using).

Step 7

Bake in the preheated oven for 40 to 45 minutes, or until the top is golden brown and the center is set. A toothpick inserted into the middle should come out mostly clean.

Step 8

Remove from the oven and allow it to cool for about 10 minutes before serving.

Step 9

Serve warm as a side dish, or enjoy on its own as a comforting snack!
