Ingredients

  • 4 pieces Fresh corn on the cob
  • 4 tablespoons Unsalted butter
  • 1 tablespoon Lime juice
  • 1 teaspoon Lime zest
  • 1 teaspoon Chili powder
  • 0.5 teaspoon Ground cumin
  • 0.5 teaspoon Garlic powder
  • 0.25 teaspoon Cayenne pepper
  • 0.5 teaspoon Salt
  • 2 tablespoons Fresh cilantro

Directions

Step 1

Preheat your grill to medium-high heat or bring a large pot of water to a boil if you prefer boiling the corn.

Step 2

If grilling, peel back the husks of the corn and remove the silk while leaving the husks attached. Soak the corn in water for 10 minutes to prevent burning on the grill. If boiling, leave the husks on or remove them entirely based on preference.

Step 3

Grill the corn for 10–12 minutes, turning occasionally, until lightly charred and tender. If boiling, cook the corn in the boiling water for 6–8 minutes until bright yellow and tender, then drain.

Step 4

In a small bowl, combine the butter, lime juice, lime zest, chili powder, ground cumin, garlic powder, cayenne pepper, and salt. Mix well until fully incorporated.

Step 5

Finely chop the fresh cilantro and set it aside for garnish.

Step 6

Once the corn is cooked, slather each cob generously with the spicy lime butter.

Step 7

Sprinkle the chopped cilantro over the top for a fresh, herbal finish.

Step 8

Serve immediately and enjoy this flavorful side dish!
