Ingredients

  • 4 ears Fresh corn on the cob
  • 3 tablespoons Unsalted butter
  • 2 tablespoons Fresh lime juice
  • 1 teaspoon Chili powder
  • 0.5 teaspoon Ground cumin
  • 0.5 teaspoon Garlic powder
  • 0.25 teaspoon Cayenne pepper
  • 0.25 teaspoon Salt
  • 2 tablespoons Fresh cilantro
  • 2 tablespoons Crumbled cotija cheese (optional)
  • 1 tablespoon Olive oil

Directions

Step 1

Preheat your grill to medium-high heat or set a grill pan on the stovetop over medium-high heat.

Step 2

Peel back the husks of the corn without fully detaching them, and remove the silk threads. Wrap the husks back around the corn and soak the ears in water for 15 minutes to prevent burning.

Step 3

Remove the soaked corn from the water and pat them dry. Lightly brush the corn with olive oil for even grilling.

Step 4

Place the corn on the grill and cook, turning occasionally, for 10-12 minutes until lightly charred and tender.

Step 5

While the corn is grilling, prepare the chili-lime butter. In a small saucepan over low heat, melt the butter. Stir in lime juice, chili powder, ground cumin, garlic powder, cayenne pepper, and salt until fully combined.

Step 6

Once the corn is cooked, use a brush to generously coat the corn with the chili-lime butter while still warm.

Step 7

Transfer the corn to a serving platter. Sprinkle each ear with freshly chopped cilantro and, if desired, crumbled cotija cheese for an extra layer of flavor.

Step 8

Serve immediately as a spicy and tangy side dish or snack.
