Knead the dough with your hands for about 2-3 minutes, until it forms a smooth and pliable consistency. If the dough feels too dry or crumbly, add a teaspoon of water at a time until it holds together. If it feels too sticky, add a small pinch of masa harina.

Divide the dough into 12 equal portions and roll each portion into a ball. Cover the balls with a damp kitchen towel to prevent them from drying out while you work.

Preheat a dry skillet or griddle over medium-high heat.

If you have a tortilla press, place a piece of parchment paper or plastic wrap on the bottom plate of the press. Place a dough ball in the center, then cover with another piece of parchment or plastic wrap. Close the press firmly to flatten the dough into a thin, round tortilla. If you don’t have a tortilla press, use a rolling pin to flatten the dough between two sheets of parchment or plastic wrap until it’s about 1/8-inch thick.

Serve the tortillas warm, or let them cool completely and store in an airtight container at room temperature for up to 2 days or in the refrigerator for up to a week. Reheat on a skillet before serving.
