Ingredients

  • 0.5 cup Unsweetened shredded coconut (optional)
  • 0.75 cup Corn syrup
  • 0.5 cup Smooth peanut butter (or any nut/seed butter of choice)
  • 0.25 cup Brown sugar
  • 1 teaspoon Vanilla extract
  • 0.25 teaspoon Salt
  • 0.25 cup Mini chocolate chips (optional)

Directions

Step 1

Preheat your oven to 350°F (175°C) and line a 9x9-inch baking pan with parchment paper, leaving a slight overhang for easy removal.

Step 2

Spread the rolled oats and chopped nuts on a baking sheet, then toast them in the preheated oven for 5-7 minutes, or until fragrant and lightly golden. Remove from oven and let cool slightly.

Step 3

In a medium saucepan over medium heat, combine corn syrup, peanut butter, and brown sugar. Heat the mixture, stirring frequently, until smooth and just starting to bubble. Remove from heat.

Stir the vanilla extract and salt into the warm syrup mixture.

Once set, use the parchment paper overhang to lift the block out of the pan. Slice into 12 bars or your desired size and shape.

Store the energy bars in an airtight container at room temperature for up to 5 days or in the fridge for up to 2 weeks.
