  • 4 pieces Bell peppers
  • 1.5 cups Corn kernels (fresh, frozen, or canned)

  • 1 cup Cheddar cheese (shredded)

  • 2 cloves Garlic (minced)
  • 1 medium Tomato (diced)
  • 2 tablespoons Olive oil
  • 1 teaspoon Ground cumin
  • 0.5 teaspoon Chili powder
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 2 tablespoons Fresh cilantro (chopped, optional)
  • 1 piece Lime (cut into wedges, for serving)

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Slice the tops off the bell peppers and remove the seeds and membranes. Set aside the tops if you want to use them as decorative lids; otherwise, discard.

In a large skillet, heat the olive oil over medium heat.

Add the chopped onion and cook for 3-4 minutes, until softened.

Add the minced garlic and cook for another minute, stirring frequently.
