Ingredients

  • 3 cups (or 4 medium ears of corn) Sweet yellow corn
  • 2 small, seeded and finely diced Jalapeño peppers
  • 0.5 medium, finely chopped Red onion
  • 0.25 cup, finely chopped Cilantro
  • 3 tablespoons, freshly squeezed Lime juice
  • 0.5 teaspoons (adjust to taste) Kosher salt
  • 1 small, finely minced Serrano pepper or green chili (optional for extra heat)
  • 0.5 cup, rinsed and drained Cooked black beans (optional)

Directions

Step 1

If using fresh corn, bring a pot of water to a boil and cook the corn ears for 4-5 minutes. Remove and allow them to cool slightly before cutting the kernels off the cob.

Step 2

If using frozen corn, defrost and drain thoroughly in advance. Pat dry with a clean kitchen towel to remove excess moisture.

Step 3

In a large mixing bowl, combine the corn kernels, diced jalapeños, red onion, and cilantro.

Step 4

Drizzle the freshly squeezed lime juice over the mix and sprinkle in the kosher salt.

Step 5

For extra spice, stir in the finely minced serrano pepper or green chili.

Step 6

If using black beans, gently fold them into the mixture to avoid breaking them apart.

Step 7

Taste and adjust seasoning or lime juice to your preference.

Step 8

Cover and refrigerate the salsa for at least 15 minutes to allow the flavors to meld together.

Step 9

Serve chilled or at room temperature as a side dish, taco topping, or dip for tortilla chips.
