Ingredients

  • 3 cups Sweet corn kernels (fresh, frozen, or canned)
  • 1 cup Cherry tomatoes
  • 1 medium Red bell pepper
  • 1 medium Cucumber
  • 0.5 medium Red onion
  • 0.25 cup Fresh cilantro
  • 0.5 cup Feta cheese (optional)
  • 3 tablespoons Extra-virgin olive oil
  • 2 tablespoons Fresh lime juice
  • 1 teaspoon Honey or maple syrup
  • 0.5 teaspoons Ground cumin
  • 0.5 teaspoons Salt
  • 0.25 teaspoons Black pepper

Directions

Step 1

If using fresh or frozen corn, cook the corn kernels in boiling water for about 5 minutes or until tender. Drain and allow to cool completely. If using canned corn, simply drain and rinse under cold water.

Cut the cherry tomatoes in halves or quarters, depending on their size.

Dice the red bell pepper and cucumber into small bite-sized pieces.

Thinly slice the red onion into half-moons.

Chop the fresh cilantro finely.
