Ingredients

  • 120 g Cornmeal
  • 240 ml Boiling water
  • 7 g Active dry yeast
  • 120 ml Lukewarm water
  • 30 ml Honey
  • 200 g Rye flour
  • 300 g Bread flour
  • 10 g Caraway seeds
  • 10 g Salt
  • 30 ml Vegetable oil or melted butter

Directions

Step 1

In a medium-sized bowl, combine the cornmeal and boiling water. Stir until smooth and let the mixture cool to lukewarm, about 15-20 minutes.

Step 2

In a small bowl, dissolve the active dry yeast in lukewarm water and let it sit for 5-10 minutes until it becomes frothy.

Step 3

In a large mixing bowl, combine the cooled cornmeal mixture, the yeast mixture, and honey. Stir well to combine.

Step 4

Add the rye flour, bread flour, caraway seeds, and salt to the wet ingredients. Mix together until the dough begins to come together.

Step 5

Turn the dough out onto a lightly floured surface and knead for about 8-10 minutes until it becomes smooth and elastic. If the dough is too sticky, add small amounts of bread flour as needed.
