Ingredients

  • 1 package Frozen puff pastry sheets
  • 3 large Eggs
  • 1 cup Heavy cream
  • 1 cup Whole kernel corn
  • 1 cup Shredded cheddar cheese
  • 2 tablespoons Green onions, finely chopped
  • 0.5 teaspoons Salt
  • 0.25 teaspoons Black pepper
  • 0.25 teaspoons Paprika (optional, for garnish)
  • 1 spray can Non-stick cooking spray

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Thaw the puff pastry sheets according to the package instructions. Once thawed, lightly flour a clean surface and roll out the pastry to smooth it.

Step 3

Cut the puff pastry into 12 equal squares and press them into the sections of a greased muffin tin, forming small cups.

Step 4

In a medium-sized mixing bowl, whisk together the eggs, heavy cream, salt, and black pepper until smooth.

Step 5

Add the corn, shredded cheddar cheese, and chopped green onions to the egg mixture. Stir until evenly combined.

Step 6

Carefully pour the filling into each pastry cup, filling them about three-fourths full to allow room for expansion as they bake.

Step 7

If desired, sprinkle a pinch of paprika on top of each quiche for added color and flavor.

Step 8

Bake the quiche minis in the preheated oven for 20–25 minutes, or until the filling is set and the tops are golden brown.

Step 9

Remove the muffin tin from the oven and let the quiches cool for 5 minutes before carefully removing them. Use a butter knife to gently loosen the edges if needed.

Step 10

Serve warm or at room temperature. These can be stored in an airtight container in the refrigerator for up to 3 days.
