Preheat your oven to 375°F (190°C). Lightly grease a 9x13-inch baking dish with olive oil and set it aside.
In a large mixing bowl, combine the cooked, shredded chicken, 1 cup of cheddar cheese, the diced onion, green chilies, and 1/2 cup of enchilada sauce. Mix until well combined.
