Ingredients

  • 2 cups sweet corn kernels (fresh or frozen)
  • 1 cup Pepper Jack cheese, shredded
  • 0.75 cup all-purpose flour
  • 0.5 cup cornmeal
  • 1 teaspoon baking powder
  • 0.5 teaspoon garlic powder
  • 0.5 teaspoon smoked paprika
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 2 large eggs
  • 0.25 cup whole milk
  • 2 green onions, finely chopped
  • 0.5 cup vegetable oil (for frying)

Directions

Step 1

In a large mixing bowl, whisk together the flour, cornmeal, baking powder, garlic powder, smoked paprika, salt, and black pepper.

Step 2

In a separate bowl, whisk together the eggs and milk until fully combined.

Step 3

Add the wet ingredients to the dry ingredients and stir until a thick batter forms. Do not overmix.

Step 4

Fold in the corn kernels, shredded Pepper Jack cheese, and green onions until evenly distributed.

Step 5

Heat the vegetable oil in a large skillet over medium heat until it shimmers (around 350°F or 175°C).

Step 6

Scoop about 3 tablespoons of batter per cake into the hot oil, flattening slightly with the back of the spoon to form a circular cake.

Step 7

Cook the cakes for 2-3 minutes on one side, or until golden brown and crisp, then flip and cook for another 2-3 minutes on the other side.

Step 8

Remove the cakes from the skillet and place them on a plate lined with paper towels to drain any excess oil.

Step 9

Repeat with the remaining batter, adding more oil to the skillet if necessary.

Step 10

Serve warm with sour cream, salsa, or your favorite dipping sauce.
