Ingredients

  • 4 ears Fresh corn on the cob
  • 4 tablespoons Unsalted butter
  • 1 medium Shallot, finely chopped
  • 1 teaspoon Fresh thyme leaves
  • 1 teaspoon Olive oil
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 4 cups Water

Directions

Step 1

Fill a large pot with 4 cups of water, add 1 teaspoon of salt, and bring to a boil.

Step 2

Shuck the fresh corn, removing the husks and silk. Rinse the corn under cool water.

Step 3

Once the water is boiling, carefully add the ears of corn. Reduce the heat to medium and let them cook for 8–10 minutes until tender but still slightly crisp. Remove the corn from the pot and set aside to drain.

Step 4

In a small skillet, heat 1 teaspoon of olive oil over medium heat. Add the finely chopped shallot and cook for 2–3 minutes, stirring often, until soft and translucent.

Step 5

Stir in the fresh thyme leaves with the shallots and cook for an additional 30 seconds, releasing their aroma. Remove the skillet from heat.

Step 6

In a medium bowl, combine 4 tablespoons of softened unsalted butter, the cooked shallot-thyme mixture, 1/2 teaspoon of black pepper, and a pinch of salt if needed. Mix until smooth and fully incorporated.

Step 7

To serve, spread a generous amount of the shallot thyme butter over each ear of corn while it's still warm. Garnish with additional thyme leaves if desired.

Step 8

Enjoy immediately as a side dish or snack!
